Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup Greek yogurt
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups diced fresh peaches
  • 1/2 cup brown sugar (for frosting)
  • 4 tbsp softened butter (for frosting)
  • 2 tbsp heavy cream or milk (for frosting)

Instructions

  1. Preheat oven to 350F and grease a 9-inch cake pan.
  2. Cream together softened butter and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla and Greek yogurt.
  4. Whisk together flour, baking powder, and baking soda; fold into the wet ingredients.
  5. Gently fold in the diced peaches.
  6. Pour batter into pan and bake for 40-45 minutes until a toothpick comes out clean.
  7. Cool the cake completely.
  8. Whisk brown sugar, butter, and cream together to create the frosting and spread over the cake.
