Description

An elegant bistro-style salad featuring crisp pears, tangy goat cheese, and toasted walnuts tossed in a honey-balsamic dressing.


Ingredients

  • 5 oz mixed baby greens (arugula and spinach blend)
  • 2 ripe Bosc or Anjou pears, thinly sliced
  • 4 oz fresh goat cheese, crumbled
  • 1/3 cup walnuts, toasted
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Toast walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant, then set aside.
  2. Thinly slice the pears into uniform wedges.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until emulsified.
  4. Place baby greens in a large bowl and toss with half of the vinaigrette.
  5. Layer the pear slices and crumbled goat cheese on top of the greens.
  6. Sprinkle with toasted walnuts and drizzle with the remaining dressing.
