Description

A tropical twist on the classic sugar cookie featuring a caramelized pineapple and cherry topping. Buttery, sweet, and visually stunning.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp melted butter (for pan)
  • 1/4 cup brown sugar (for pan)
  • 12 pineapple tidbits
  • 12 maraschino cherry halves

Instructions

  1. Preheat oven to 350F (175C).
  2. Cream together softened butter and granulated sugar until fluffy.
  3. Beat in the egg and vanilla extract until combined.
  4. Stir in flour, baking powder, and salt until just mixed.
  5. Place 1 tbsp melted butter and 1 tsp brown sugar into each slot of a muffin tin or spacing on a tray.
  6. Press one pineapple tidbit and one cherry half into the sugar mixture.
  7. Spoon about 2 tbsp of dough over the fruit and press lightly.
  8. Bake for 12-15 minutes until edges are golden brown.
  9. Let cool for 2 minutes, then flip onto a wire rack.
