A tropical twist on the classic sugar cookie featuring a caramelized pineapple and cherry topping. Buttery, sweet, and visually stunning.

- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 4 tbsp melted butter (for pan)
- 1/4 cup brown sugar (for pan)
- 12 pineapple tidbits
- 12 maraschino cherry halves
Instructions
- Preheat oven to 350F (175C).
- Cream together softened butter and granulated sugar until fluffy.
- Beat in the egg and vanilla extract until combined.
- Stir in flour, baking powder, and salt until just mixed.
- Place 1 tbsp melted butter and 1 tsp brown sugar into each slot of a muffin tin or spacing on a tray.
- Press one pineapple tidbit and one cherry half into the sugar mixture.
- Spoon about 2 tbsp of dough over the fruit and press lightly.
- Bake for 12-15 minutes until edges are golden brown.
- Let cool for 2 minutes, then flip onto a wire rack.
