Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/4 cup maple syrup
  • 3 tbsp melted butter
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In a large bowl, beat eggs, oil, brown sugar, and pumpkin puree until smooth.
  4. Fold the dry ingredients into the wet ingredients using a spatula until just combined.
  5. In a small bowl, stir together chopped pecans, melted butter, and maple syrup.
  6. Pour the batter into the loaf pan and spread the pecan mixture evenly on top.
  7. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
