Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/4 cup melted butter (for topping)
  • 1/4 cup maple syrup (for topping)
  • 1/2 cup brown sugar (for topping)
  • 1/2 cup chopped pecans (for topping)

Instructions

  1. Preheat your oven to 350F (175C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a large bowl, beat the eggs, oil, pumpkin puree, and granulated sugar until smooth.
  4. Fold the dry ingredients into the wet ingredients using a spatula until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. In a small bowl, mix melted butter, maple syrup, brown sugar, and chopped pecans into a paste.
  7. Spread the pecan mixture evenly over the top of the batter.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
