- 1.5 cups graham cracker crumbs
- 6 tbsp melted unsalted butter
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup pumpkin puree
- 2 large eggs
- 1 tsp pumpkin pie spice
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350F and line an 8×8 inch pan with parchment paper.
- Mix graham cracker crumbs and melted butter; press into the pan and bake for 10 minutes. Remove and cool.
- Lower oven temperature to 325F.
- Beat softened cream cheese until smooth, then mix in sugar until fluffy.
- Add eggs one at a time, mixing on low speed until just combined.
- Stir in pumpkin puree, pumpkin pie spice, and vanilla extract until smooth.
- Pour batter over the crust and bake for 35-45 minutes until the edges are set but the center jiggles slightly.
- Cool to room temperature, then refrigerate for at least 6 hours before slicing.
