- 1/2 cup brown sugar

- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/3 cup brown sugar (for topping)
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup whole milk
Instructions
- Preheat your oven to 350°F and grease an 8×8 inch baking dish with butter.
- In a medium bowl, whisk together pumpkin puree, 1/2 cup brown sugar, cinnamon, and nutmeg until smooth.
- Pour the pumpkin mixture into the prepared baking dish and spread evenly with a spatula.
- In a separate bowl, whisk together flour, baking powder, salt, and 1/3 cup brown sugar.
- Cut the chilled butter into the flour mixture using a pastry cutter or forks until coarse crumbs form.
- Stir in the milk gradually until a soft, sticky dough forms; do not over-mix.
- Drop spoonfuls of the dough onto the pumpkin base, leaving small spaces between them.
- Bake for 30-35 minutes until the topping is golden brown and the filling is set.
- Let the cobbler cool for 15 minutes before slicing and serving.
