  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup melted unsalted butter
  • 1 tablespoon orange zest
  • 1/4 cup granulated sugar
  • 1 cup semi-sweet chocolate chips
  • 1 cup milk

Instructions

  1. Preheat your waffle iron to medium-high heat and grease the grids with butter or oil.
  2. In a large mixing bowl, whisk together the flour, baking powder, pumpkin pie spice, and salt.
  3. In a medium bowl, beat the eggs, then whisk in the pumpkin puree, melted butter, sugar, and orange zest until smooth.
  4. Slowly stir the milk into the wet mixture until combined.
  5. Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined; do not overmix.
  6. Gently fold in the semi-sweet chocolate chips using a spatula.
  7. Pour about 1/2 cup of batter into the center of the waffle iron and close the lid.
  8. Cook until the steam stops escaping from the sides of the iron, typically 3-5 minutes.
  9. Remove the waffles with a fork and let them rest on a wire rack for one minute before serving.
