- 2 lbs ground turkey
- 1/2 cup almond flour
- 2 large eggs
- 1/2 cup diced onion
- 1/4 cup diced celery
- 2 cloves garlic, minced
- 2 tbsp Worcestershire sauce
- 1/4 cup tomato paste
- 2 tbsp monk fruit sweetener
- 1 tbsp apple cider vinegar
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C) and line a loaf pan with parchment paper.
- Sauté onion, celery, and garlic in a pan over medium heat until softened, then let cool slightly.
- In a large mixing bowl, whisk together eggs and Worcestershire sauce until combined.
- Add ground turkey, almond flour, salt, and pepper to the bowl; fold gently until just combined.
- Press the meat mixture firmly into the prepared loaf pan.
- Whisk tomato paste, sweetener, and apple cider vinegar together, then spread over the top of the meatloaf.
- Bake for 45-55 minutes or until the internal temperature reaches 165°F.
- Let the meatloaf rest for 10 minutes before slicing into portions.
