- 4 tablespoons unsalted butter
- 2 medium yellow onions, thinly sliced
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1/4 cup all-purpose flour
- 3 cups beef or vegetable broth
- 1 tablespoon soy sauce
- 1/2 teaspoon black pepper
- Salt to taste
Instructions
- Melt 2 tablespoons of butter in a large skillet over medium-low heat.
- Add sliced onions and cook, stirring occasionally, for 20-25 minutes until deep golden brown.
- Increase heat to medium-high and add the remaining 2 tablespoons of butter and the sliced mushrooms.
- Cook mushrooms for 5-7 minutes without excessive stirring until browned.
- Stir in the minced garlic and fresh thyme, cooking for 60 seconds.
- Sprinkle the flour over the mixture and stir constantly for 2 minutes to cook out the raw flour taste.
- Slowly pour in the broth while whisking continuously to avoid lumps.
- Simmer on low heat for 10 minutes until the gravy thickens enough to coat a spoon.
- Stir in the soy sauce and black pepper. Adjust salt to taste and serve immediately.
