Instructions
- Smash the cucumbers using a rolling pin or wide knife until they crack.
- Toss cucumber chunks with salt and let sit for 10 minutes.
- Rinse cucumbers under cold water and pat completely dry with paper towels.
- Whisk together rice vinegar, soy sauce, sesame oil, and sugar in a bowl.
- Stir the minced garlic into the dressing until well combined.
- Fold the cucumbers into the dressing until evenly coated.
- Garnish with toasted sesame seeds and chili flakes before serving.
