Description

Tender salmon fillets roasted on a single sheet pan with fresh vegetables and a sweet, tangy balsamic glaze reduction.


Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F and line a large sheet pan with parchment paper.
  2. Place the trimmed asparagus on the pan, drizzle with 1 tablespoon of olive oil, and season with salt and pepper.
  3. Place the salmon fillets in the center of the pan and drizzle the remaining olive oil over them.
  4. In a small bowl, whisk together the balsamic vinegar, honey, and minced garlic until smooth.
  5. Brush the balsamic glaze generously over the top and sides of each salmon fillet.
  6. Roast in the oven for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F.
  7. Remove from the oven and let the fish rest for 2 minutes before serving.
