Description

Tender shrimp threaded on skewers and seared to perfection, finished with a rich and bright lemon butter sauce. A quick, elegant meal perfect for any night of the week.


Ingredients

  • 1 lb jumbo shrimp, peeled and deveined (tails on)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 tbsp unsalted butter
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Soak wooden skewers in water for 30 minutes to prevent burning.
  2. In a bowl, toss shrimp with olive oil, minced garlic, paprika, salt, and pepper. Marinate for 15-30 minutes.
  3. Thread the marinated shrimp onto skewers, leaving a small gap between each piece.
  4. Heat a grill or skillet over medium-high heat and cook skewers for 2-3 minutes per side until opaque and pink.
  5. While shrimp cook, melt butter in a small saucepan over low heat and stir in lemon juice.
  6. Brush the lemon butter sauce onto the shrimp during the last minute of cooking.
  7. Remove from heat and garnish with fresh chopped parsley.
