- 3–4 lb beef chuck roast
- 2 tbsp olive oil
- 1/2 cup balsamic vinegar
- 1/4 cup brown sugar, packed
- 2 tbsp Worcestershire sauce
- 4 cloves garlic, minced
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
- Season the beef roast generously with salt and black pepper on all sides.
- Heat olive oil in a skillet over medium-high heat and sear the roast until browned on all sides, about 4-5 minutes per side.
- In a small bowl, whisk together balsamic vinegar, brown sugar, Worcestershire sauce, minced garlic, and dried thyme.
- Transfer the seared roast to the slow cooker.
- Pour the balsamic glaze over the roast.
- Cover and cook on Low for 8 hours or High for 4-5 hours until the beef is fork-tender.
- Remove the roast and let it rest for 10 minutes before slicing or shredding.
- Spoon the pan juices over the meat before serving.
