Description

Ingredients

  • 34 lb beef chuck roast
  • 2 tbsp olive oil
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar, packed
  • 2 tbsp Worcestershire sauce
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and black pepper to taste

Instructions

  1. Season the beef roast generously with salt and black pepper on all sides.
  2. Heat olive oil in a skillet over medium-high heat and sear the roast until browned on all sides, about 4-5 minutes per side.
  3. In a small bowl, whisk together balsamic vinegar, brown sugar, Worcestershire sauce, minced garlic, and dried thyme.
  4. Transfer the seared roast to the slow cooker.
  5. Pour the balsamic glaze over the roast.
  6. Cover and cook on Low for 8 hours or High for 4-5 hours until the beef is fork-tender.
  7. Remove the roast and let it rest for 10 minutes before slicing or shredding.
  8. Spoon the pan juices over the meat before serving.
