A sophisticated and comforting dinner featuring tender chicken simmered in a rich, savory Marsala wine and mushroom sauce, made easy in the slow cooker.

- 1.5 lbs boneless skinless chicken breasts or thighs
- 8 oz sliced cremini or button mushrooms
- 1/2 cup dry Marsala wine
- 1/4 cup chicken broth
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp butter, cold
- 1 tbsp cornstarch
- 2 tbsp cold water
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
- Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat and brown chicken for 3-4 minutes per side. Transfer chicken to the slow cooker.
- In the same skillet, sauté mushrooms until browned. Stir in minced garlic and cook for 1 minute more. Add mushrooms and garlic to the slow cooker.
- Whisk together Marsala wine and chicken broth. Pour the mixture over the chicken and mushrooms in the slow cooker.
- Cover and cook on Low for 6-7 hours or High for 3-4 hours.
- In a small bowl, whisk cornstarch and cold water until smooth. Stir the slurry into the slow cooker and cook on High for an additional 30 minutes to thicken.
- Stir in the cold butter and fresh parsley right before serving to add shine and freshness.
