Description

A hearty and aromatic slow cooker soup featuring tender shredded chicken, earthy rosemary, and mellowed garlic cloves in a savory broth.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 3 carrots, sliced into rounds
  • 2 stalks celery, sliced
  • 1 medium yellow onion, diced
  • 6 garlic cloves, smashed
  • 3 sprigs fresh rosemary
  • 8 cups chicken broth
  • 1 tsp black pepper
  • 1 tsp salt (or to taste)
  • 2 tbsp olive oil

Instructions

  1. Place the diced onion, sliced carrots, celery, and smashed garlic cloves at the bottom of the slow cooker.
  2. Lay the chicken thighs on top of the vegetables.
  3. Tuck the fresh rosemary sprigs around the chicken.
  4. Pour the chicken broth over the ingredients until they are submerged.
  5. Season with black pepper and a pinch of salt.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Remove the chicken thighs to a plate and shred with two forks.
  8. Remove and discard the rosemary sprigs.
  9. Stir the shredded chicken back into the soup and adjust salt to taste.
