Tender beef chuck roast slow-cooked to perfection and served on toasted baguettes with a side of rich, savory au jus for dipping.

- 3–4 lb beef chuck roast
- 2 tbsp vegetable oil
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 1 French baguette, sliced and toasted
- 6 slices provolone cheese
- 2 tbsp butter
Instructions
- Heat vegetable oil in a large skillet over medium-high heat and sear the beef roast on all sides until browned.
- Place sliced onions and minced garlic at the bottom of the slow cooker.
- Whisk together beef broth and Worcestershire sauce, then pour over the onions and garlic.
- Place the seared roast into the slow cooker, cover, and cook on low for 8 hours or high for 4-5 hours.
- Transfer the beef to a board and shred with two forks into chunky pieces.
- Strain the cooking liquid into a saucepan and simmer over medium heat for 10 minutes to reduce.
- Toast the sliced baguette with butter in the oven or a pan until golden.
- Pile shredded beef onto the bread, top with provolone, and broil until the cheese is melted.
