Description

Tender beef chuck roast slow-cooked to perfection and served on toasted baguettes with a side of rich, savory au jus for dipping.


Ingredients

  • 34 lb beef chuck roast
  • 2 tbsp vegetable oil
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 1 French baguette, sliced and toasted
  • 6 slices provolone cheese
  • 2 tbsp butter

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat and sear the beef roast on all sides until browned.
  2. Place sliced onions and minced garlic at the bottom of the slow cooker.
  3. Whisk together beef broth and Worcestershire sauce, then pour over the onions and garlic.
  4. Place the seared roast into the slow cooker, cover, and cook on low for 8 hours or high for 4-5 hours.
  5. Transfer the beef to a board and shred with two forks into chunky pieces.
  6. Strain the cooking liquid into a saucepan and simmer over medium heat for 10 minutes to reduce.
  7. Toast the sliced baguette with butter in the oven or a pan until golden.
  8. Pile shredded beef onto the bread, top with provolone, and broil until the cheese is melted.
