  • 34 lb pork loin roast
  • 1/2 cup balsamic vinegar
  • 1/3 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Season the pork loin generously with salt and black pepper on all sides.
  2. Heat olive oil in a large skillet over medium-high heat and sear the pork for 3-4 minutes per side until browned.
  3. Place the seared pork into the slow cooker.
  4. In a bowl, whisk together balsamic vinegar, brown sugar, minced garlic, and dried rosemary.
  5. Pour the balsamic mixture over the pork loin, coating it evenly.
  6. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until the internal temperature reaches 145°F.
  7. Remove the pork to a plate and let it rest for 15 minutes.
  8. Pour the remaining cooking liquid into a saucepan and simmer over medium heat for 5-10 minutes until reduced to a thick glaze.
  9. Slice the pork into medallions and drizzle with the reduced balsamic glaze.
