- 3–4 lb pork loin roast
- 1/2 cup balsamic vinegar
- 1/3 cup brown sugar
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Season the pork loin generously with salt and black pepper on all sides.
- Heat olive oil in a large skillet over medium-high heat and sear the pork for 3-4 minutes per side until browned.
- Place the seared pork into the slow cooker.
- In a bowl, whisk together balsamic vinegar, brown sugar, minced garlic, and dried rosemary.
- Pour the balsamic mixture over the pork loin, coating it evenly.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until the internal temperature reaches 145°F.
- Remove the pork to a plate and let it rest for 15 minutes.
- Pour the remaining cooking liquid into a saucepan and simmer over medium heat for 5-10 minutes until reduced to a thick glaze.
- Slice the pork into medallions and drizzle with the reduced balsamic glaze.
