Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/2 cup canned coconut milk
  • 1 tablespoon fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon red pepper flakes
  • Fresh cilantro and sliced green onions for garnish

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. In a medium bowl, whisk together peanut butter, soy sauce, brown sugar, coconut milk, grated ginger, minced garlic, and red pepper flakes until smooth.
  3. Pour the peanut sauce over the chicken, ensuring the meat is fully coated.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until chicken reaches 165°F.
  5. Remove chicken to a plate and shred using two forks.
  6. Return shredded chicken to the slow cooker and stir in the lime juice.
  7. Serve over rice or noodles and garnish with fresh cilantro and green onions.
