A savory and creamy Thai-inspired chicken dish slow-cooked in a rich peanut and coconut sauce. Perfectly balanced with lime, ginger, and a touch of heat.


Ingredients

  • 1.5 lbs chicken thighs
  • 1/2 cup creamy peanut butter
  • 1/2 cup full-fat coconut milk
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp minced ginger
  • 3 cloves garlic, minced
  • 1 tbsp sriracha
  • 1 tbsp lime juice
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Place chicken thighs in the slow cooker.
  2. In a bowl, whisk together peanut butter, coconut milk, soy sauce, honey, ginger, garlic, and sriracha until smooth.
  3. Pour the peanut sauce over the chicken, coating all pieces.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Remove chicken, shred with two forks, and return to the sauce.
  6. Stir in lime juice and serve hot over rice.
