- 4–6 lb bone-in turkey breast
- 2 tbsp kosher salt
- 1 tbsp black pepper
- 1 cup fresh cranberries
- 1/2 cup fresh orange juice
- 1 tbsp orange zest
- 1/2 cup brown sugar
- 2 tbsp unsalted butter
- Applewood wood chips
Instructions
- Pat the turkey breast dry and season thoroughly with salt and pepper on all sides.
- Preheat the smoker to 225F using applewood chips.
- Place turkey in the smoker and cook until the internal temperature reaches 145F.
- Combine cranberries, orange juice, zest, and brown sugar in a saucepan over medium heat; simmer until thickened.
- Brush a generous layer of the cranberry orange glaze over the turkey.
- Increase smoker temperature to 325F and cook until the internal temperature reaches 165F.
- Apply a final glaze layer in the last 15 minutes of cooking for a lacquered finish.
- Remove from heat and let the turkey rest for 20 minutes before slicing.
