Description

A soft and chewy cookie that captures the essence of a strawberry cheesecake. Made with cream cheese and freeze-dried strawberries for a concentrated flavor.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tbsp cornstarch
  • 1/2 cup freeze-dried strawberries, crushed
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Beat softened butter and cream cheese together until smooth.
  3. Mix in granulated sugar and vanilla extract until fluffy.
  4. Whisk flour, cornstarch, baking soda, and salt together in a separate bowl.
  5. Gradually stir the dry ingredients into the creamed mixture until just combined.
  6. Fold in the crushed freeze-dried strawberries.
  7. Chill the dough in the refrigerator for 30 minutes.
  8. Scoop 1-tablespoon portions of dough and place them on the baking sheet.
  9. Bake for 10-12 minutes until the edges are lightly golden.
  10. Cool on the pan for 5 minutes before transferring to a wire rack.
