Description

A soft, chewy cookie infused with a concentrated strawberry reduction and cream cheese, topped with a tangy cream cheese frosting.


Ingredients

  • 1 cup fresh strawberries, pureed
  • 4 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 4 oz cream cheese, softened (for frosting)
  • 1/4 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar (for frosting)

Instructions

  1. Simmer pureed strawberries in a saucepan over medium heat until reduced by half into a thick syrup. Let cool completely.
  2. Cream together 1/2 cup butter and 3/4 cup sugar until fluffy.
  3. Beat in 4 oz softened cream cheese until smooth.
  4. Stir in the egg, vanilla extract, and the cooled strawberry reduction.
  5. Whisk together flour and baking soda, then gradually mix into the wet ingredients until just combined.
  6. Refrigerate the dough for at least 1 hour.
  7. Preheat oven to 350°F and line a baking sheet with parchment paper.
  8. Scoop 1-tablespoon portions and bake for 10-12 minutes until edges are set.
  9. Allow cookies to cool completely on the pan.
  10. Beat frosting ingredients (cream cheese, butter, powdered sugar) until smooth and pipe onto cooled cookies.
