Description

A vibrant and hearty bowl featuring seared seasoned chicken, charred Mexican street corn, and fluffy rice, topped with salty cotija cheese and fresh lime.


Ingredients

  • 1.5 lbs chicken breast, cubed
  • 2 cups corn kernels (fresh or frozen)
  • 3 cups cooked white or brown rice
  • 1/4 cup mayonnaise
  • 1/2 cup crumbled cotija cheese
  • 2 limes, juiced and zested
  • 1 tbsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Toss cubed chicken with smoked paprika, cumin, salt, and pepper.
  2. Heat 1 tbsp oil in a large skillet over medium-high heat. Sear chicken until golden and cooked through (about 8-10 minutes). Remove and set aside.
  3. Add another tbsp of oil to the same pan. Add corn and cook undisturbed for 3-5 minutes until charred spots appear.
  4. Turn heat to low. Stir in mayonnaise, lime juice, and chili powder into the corn until creamy.
  5. Divide cooked rice into four bowls.
  6. Top each bowl with seared chicken and a generous scoop of street corn mixture.
  7. Garnish with crumbled cotija cheese, fresh cilantro, and extra lime zest.
