- 1.5 lbs chicken breast, cubed
- 2 cups corn kernels (fresh or frozen)
- 3 cups cooked white or brown rice
- 1/4 cup mayonnaise
- 1/2 cup crumbled cotija cheese
- 2 limes, juiced and zested
- 1 tbsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Toss cubed chicken with smoked paprika, cumin, salt, and pepper.
- Heat 1 tbsp oil in a large skillet over medium-high heat. Sear chicken until golden and cooked through (about 8-10 minutes). Remove and set aside.
- Add another tbsp of oil to the same pan. Add corn and cook undisturbed for 3-5 minutes until charred spots appear.
- Turn heat to low. Stir in mayonnaise, lime juice, and chili powder into the corn until creamy.
- Divide cooked rice into four bowls.
- Top each bowl with seared chicken and a generous scoop of street corn mixture.
- Garnish with crumbled cotija cheese, fresh cilantro, and extra lime zest.
