Description
Fresh and vibrant rice paper rolls filled with sweet chili glazed shrimp and a rainbow of crunchy vegetables. A light, healthy, and spicy appetizer or meal.

- 1 lb medium shrimp, peeled and deveined
- 1/2 cup sweet chili sauce
- 12 rice paper wrappers
- 1 large carrot, julienned
- 1 cucumber, julienned
- 1 cup red cabbage, thinly sliced
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1 tbsp neutral oil
Instructions
- Heat oil in a large skillet over medium-high heat.
- Add shrimp and sear for 2 minutes per side until pink.
- Pour sweet chili sauce into the pan and toss shrimp for 1 minute until glazed.
- Remove shrimp from pan and set aside to cool slightly.
- Dip one rice paper wrapper in warm water for 3-5 seconds and lay flat on a damp surface.
- Place a small amount of cabbage, carrots, and cucumber in the center of the wrap.
- Top vegetables with mint, cilantro, and two pieces of glazed shrimp.
- Fold the bottom edge over the filling, tuck in the sides, and roll tightly.
