Description
Luxuriously tender beef short ribs slow-cooked in a rich red wine and aromatic vegetable reduction. A gourmet comfort meal with minimal effort.

- 3–4 lbs Beef Short Ribs
- 2 cups Dry Red Wine (Cabernet or Merlot)
- 2 cups Beef Broth
- 2 large Carrots, diced
- 2 stalks Celery, diced
- 1 large Onion, diced
- 4 cloves Garlic, minced
- 2 tbsp Tomato Paste
- 3 sprigs Fresh Thyme
- 2 Bay Leaves
- 2 tbsp Olive Oil
- Salt and Pepper to taste
Instructions
- Season ribs with salt and pepper; sear in a skillet with oil until browned on all sides.
- Sauté diced onions, carrots, and celery in the same pan until softened.
- Stir in garlic and tomato paste, cooking for 2 minutes.
- Deglaze the pan by pouring in red wine and scraping the browned bits from the bottom.
- Transfer vegetables and wine to the crockpot, then add the seared ribs.
- Pour in beef broth and add thyme and bay leaves.
- Cook on LOW for 8 hours or HIGH for 4-6 hours until tender.
- Remove ribs and reduce the cooking liquid in a saucepan over medium heat until thickened into a glaze.
