Description

Luxuriously tender beef short ribs slow-cooked in a rich red wine and aromatic vegetable reduction. A gourmet comfort meal with minimal effort.


Ingredients

  • 34 lbs Beef Short Ribs
  • 2 cups Dry Red Wine (Cabernet or Merlot)
  • 2 cups Beef Broth
  • 2 large Carrots, diced
  • 2 stalks Celery, diced
  • 1 large Onion, diced
  • 4 cloves Garlic, minced
  • 2 tbsp Tomato Paste
  • 3 sprigs Fresh Thyme
  • 2 Bay Leaves
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Season ribs with salt and pepper; sear in a skillet with oil until browned on all sides.
  2. Sauté diced onions, carrots, and celery in the same pan until softened.
  3. Stir in garlic and tomato paste, cooking for 2 minutes.
  4. Deglaze the pan by pouring in red wine and scraping the browned bits from the bottom.
  5. Transfer vegetables and wine to the crockpot, then add the seared ribs.
  6. Pour in beef broth and add thyme and bay leaves.
  7. Cook on LOW for 8 hours or HIGH for 4-6 hours until tender.
  8. Remove ribs and reduce the cooking liquid in a saucepan over medium heat until thickened into a glaze.
