- 4 bone-in, skin-on chicken thighs
- 3 chipotle peppers in adobo sauce
- 2 tbsp apple cider vinegar
- 2 tbsp honey
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 1 tbsp vegetable oil
- Fresh cilantro and lime for garnish
Instructions
- Season chicken thighs with salt and pepper.
- Sear chicken skin-side down in oil over medium-high heat until golden brown.
- Blend chipotle peppers, vinegar, honey, garlic, and paprika into a paste.
- Pour marinade over chicken and baste thoroughly.
- Bake at 325°F or simmer on stovetop until internal temp reaches 165°F.
- Rest for 5 minutes, garnish with cilantro and lime, and serve.
