Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 3 chipotle peppers in adobo sauce
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tbsp vegetable oil
  • Fresh cilantro and lime for garnish

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Sear chicken skin-side down in oil over medium-high heat until golden brown.
  3. Blend chipotle peppers, vinegar, honey, garlic, and paprika into a paste.
  4. Pour marinade over chicken and baste thoroughly.
  5. Bake at 325°F or simmer on stovetop until internal temp reaches 165°F.
  6. Rest for 5 minutes, garnish with cilantro and lime, and serve.
