Description

A juicy and tender pork shoulder slow-cooked with a savory dry rub and a touch of acidity for a perfect melt-in-your-mouth texture.


Ingredients

  • 45 lb pork shoulder (pork butt)
  • 1/4 cup brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 onion, sliced
  • 4 garlic cloves, smashed
  • 1/2 cup apple cider vinegar
  • 2 tablespoons vegetable oil

Instructions

  1. Mix brown sugar, smoked paprika, salt, and black pepper in a bowl.
  2. Rub the spice mixture evenly over all sides of the pork shoulder.
  3. Heat oil in a skillet over medium-high heat and sear the pork for 3-5 minutes per side until browned.
  4. Place sliced onions and smashed garlic at the bottom of the slow cooker.
  5. Pour apple cider vinegar into the bottom of the pot around the vegetables.
  6. Place the seared pork on top of the onions and garlic.
  7. Cover and cook on Low for 8 to 10 hours until the meat reaches an internal temperature of 205°F.
  8. Remove the meat and let it rest for 15 minutes before shredding with forks or slicing.
