Ingredients

  • 2 cups grated zucchini, squeezed dry
  • 1.5 cups brown sugar, packed
  • 1/2 cup salted caramel sauce
  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 8 oz cream cheese, softened
  • 3 cups powdered sugar

Instructions

  1. Preheat oven to 350F and grease two 9-inch cake pans.
  2. Cream butter and brown sugar until fluffy.
  3. Beat in eggs, vanilla, and caramel sauce.
  4. Sift and stir in flour, baking soda, and salt.
  5. Fold in grated zucchini gently.
  6. Divide batter into pans and bake for 30-35 minutes.
  7. Cool cakes completely before frosting.
  8. Whip cream cheese, butter, and powdered sugar together.
  9. Frost and assemble the cake layers.
