Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 cups tart apples (Granny Smith), peeled and diced
  • 1 tbsp flour (for tossing apples)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream butter and sugar together until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. Whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually fold the dry ingredients into the wet batter until just combined.
  6. Toss diced apples in 1 tbsp of flour, then fold them gently into the batter.
  7. Pour batter into the pan and bake for 45-55 minutes until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
