- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1.5 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 2 cups tart apples (Granny Smith), peeled and diced
- 1 tbsp flour (for tossing apples)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Cream butter and sugar together until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually fold the dry ingredients into the wet batter until just combined.
- Toss diced apples in 1 tbsp of flour, then fold them gently into the batter.
- Pour batter into the pan and bake for 45-55 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
