A traditional Mexican meatball soup featuring tender beef meatballs with rice and mint, simmered in a clear vegetable broth.

- 1 lb ground beef
- 1/4 cup uncooked white rice
- 1/4 cup fresh mint, chopped
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 8 cups beef broth
- 2 carrots, diced
- 2 zucchini, diced
- 2 potatoes, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 lime, juiced
Instructions
- In a bowl, mix ground beef, uncooked rice, chopped mint, egg, salt, and pepper.
- Roll the mixture into small meatballs.
- Heat oil in a large pot and brown meatballs on all sides; remove and set aside.
- In the same pot, sauté onion and garlic until translucent.
- Pour in beef broth and bring to a simmer.
- Add meatballs, carrots, and potatoes; simmer for 15 minutes.
- Stir in zucchini and cook for another 5-8 minutes.
- Stir in lime juice and serve hot.
