Description
A savory blend of seared chicken and cheese tortellini tossed in a tangy balsamic reduction over a bed of fresh baby spinach.
Ingredients

- 1.5 lbs chicken breast, cubed
- 12 oz cheese tortellini
- 1/3 cup balsamic glaze
- 4 cups baby spinach
- 1 pint cherry tomatoes, halved
- 1/2 cup shaved Parmesan cheese
- 2 tbsp olive oil
- 1 tsp honey
- Salt and black pepper to taste
Instructions
- Boil tortellini for 1 minute less than package instructions; drain.
- Sauté cubed chicken in olive oil until golden brown.
- Whisk balsamic glaze with honey and pepper.
- Pour half the glaze over chicken in the pan to coat.
- Stir in cooked tortellini until warmed through.
- Place spinach and tomatoes in a bowl; top with warm chicken and pasta.
- Drizzle remaining glaze and top with Parmesan.
