Ingredients

  • 8 cups unfiltered apple cider
  • 2-inch piece of fresh ginger, peeled and sliced
  • 1/2 teaspoon ground nutmeg (or 1 whole nutmeg grated)
  • 2 cinnamon sticks
  • 4 whole cloves
  • 2 tablespoons honey or maple syrup

Instructions

  1. Peel the ginger root using a spoon and slice into thin rounds.
  2. Pour the apple cider into a large pot over medium heat.
  3. Add the sliced ginger, cinnamon sticks, cloves, and nutmeg to the pot.
  4. Bring the liquid to a gentle simmer, then reduce heat to low.
  5. Simmer uncovered for 20-30 minutes until the flavors are well integrated.
  6. Stir in the honey or maple syrup until fully dissolved.
  7. Strain the cider through a fine-mesh sieve into warm mugs.
