Ingredients

  • 4 skin‑on salmon fillets 6‑8 oz each
  • 3 tbsp olive oil
  • 1 lemon (zest and juice)
  • 2 tbsp fresh dill (chopped)

  • Salt and pepper to taste
  • 1 cucumber (thinly sliced)
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp dried dill

Instructions

  1. Preheat grill to medium heat.
  2. Season salmon with salt, pepper, olive oil, lemon zest, and dill.
  3. Grill salmon skin side down for 4‑5 minutes, then flip and grill 3‑4 minutes.
  4. Mix dressing with olive oil, lemon juice, honey, mustard, and dill.
  5. Toss cucumber ribbons, red onion, dill, and dressing; chill 10 min.
