- 1.5 lbs chicken breast, sliced into strips
- 1/4 cup silver tequila
- 1/4 cup fresh lime juice
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 2 cups cooked brown rice
- 1/2 cup chopped fresh cilantro
- 1 can (15oz) black beans, rinsed
- 1 cup frozen corn, thawed
- 1 ripe avocado, sliced
- Salt and pepper to taste
Instructions
- Whisk together tequila, lime juice, olive oil, garlic, and cumin in a bowl.
- Add chicken strips to the marinade and refrigerate for at least 30 minutes.
- Stir chopped cilantro and a squeeze of lime into the cooked brown rice.
- Heat a large skillet over medium-high heat with oil; sear chicken for 6-7 minutes per side until charred.
- Let the chicken rest for 5-10 minutes before slicing.
- Assemble bowls with a base of rice, black beans, and corn.
- Top with sliced chicken, avocado, and extra cilantro.
