Description

Crispy, golden zucchini fritters made in the air fryer. A high-protein, low-carb alternative to traditional fried fritters, perfectly paired with a dip.


Ingredients

  • 2 medium zucchinis, grated
  • 1/2 cup almond flour
  • 1/3 cup grated parmesan cheese
  • 2 large eggs
  • 1 tsp garlic powder
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Grate zucchini and salt it; let sit for 10 mins then squeeze out all liquid.
  2. Whisk eggs in a bowl until frothy.
  3. Stir in almond flour, parmesan, garlic powder, and parsley.
  4. Fold in the squeezed zucchini until combined.
  5. Scoop mixture onto a greased air fryer basket, leaving space between fritters.
  6. Air fry at 375°F for 10-12 minutes, flipping halfway through.
