Description

A buttery, soft cookie base topped with realistic royal icing eyeballs. Perfectly creepy for Halloween parties and easy for all skill levels.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 cups powdered sugar
  • 2 tbsp milk or water
  • Gel food coloring (red, blue, green, black)

Instructions

  1. Preheat oven to 350F and line baking sheets with parchment paper.
  2. Cream together butter and cream cheese until smooth and fluffy.
  3. Beat in sugar, egg, and vanilla extract until well combined.
  4. Stir in flour, baking soda, and salt until just combined.
  5. Chill dough in the refrigerator for 30 minutes.
  6. Scoop rounded tablespoons of dough and place on baking sheets.
  7. Bake for 10-12 minutes or until edges are barely golden.
  8. Cool cookies completely on a wire rack.
  9. Mix powdered sugar and milk to create a stiff royal icing.
  10. Pipe a white circle on each cookie, then add a colored iris and a black pupil.
