Description
A buttery, soft cookie base topped with realistic royal icing eyeballs. Perfectly creepy for Halloween parties and easy for all skill levels.

- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 cups powdered sugar
- 2 tbsp milk or water
- Gel food coloring (red, blue, green, black)
Instructions
- Preheat oven to 350F and line baking sheets with parchment paper.
- Cream together butter and cream cheese until smooth and fluffy.
- Beat in sugar, egg, and vanilla extract until well combined.
- Stir in flour, baking soda, and salt until just combined.
- Chill dough in the refrigerator for 30 minutes.
- Scoop rounded tablespoons of dough and place on baking sheets.
- Bake for 10-12 minutes or until edges are barely golden.
- Cool cookies completely on a wire rack.
- Mix powdered sugar and milk to create a stiff royal icing.
- Pipe a white circle on each cookie, then add a colored iris and a black pupil.
