- 12 oz pasta of choice
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- 8 oz mascarpone cheese, room temperature
- 1/2 cup grated Parmesan cheese
- 1/2 cup reserved pasta water
- 1 tbsp fresh lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
- Cook pasta in salted boiling water according to package directions. Reserve 1 cup of pasta water before draining.
- Melt butter in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Reduce heat to medium-low and stir in the mascarpone cheese, whisking until smooth and melted.
- Stir in the grated parmesan cheese and black pepper until fully incorporated.
- Gradually whisk in the reserved pasta water until the sauce reaches a creamy, coating consistency.
- Stir in the lemon juice and salt to taste.
- Add the cooked pasta to the skillet and toss gently until evenly coated.
- Remove from heat and stir in fresh parsley before serving.
