Description

Tender cubes of butternut squash roasted with a rich maple syrup and garlic glaze, infused with fresh rosemary for a perfect balance of sweet and savory.

Ingredients

Scale
  • 1 medium butternut squash, peeled and cubed into 1-inch pieces
  • 3 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together olive oil, maple syrup, minced garlic, and chopped rosemary.
  3. Add the cubed butternut squash to the bowl and toss until every piece is evenly coated in the glaze.
  4. Spread the squash in a single layer on the prepared baking sheet, ensuring the pieces are not touching.
  5. Roast for 25-30 minutes, tossing the cubes halfway through the cooking time.
  6. Remove from the oven once the squash is tender and the edges are deeply caramelized.
  7. Let the squash rest for 5 minutes before serving to allow the glaze to set.
