Description

A vibrant medley of carrots and parsnips roasted with honey, garlic, and fresh herbs for a caramelized, sweet-and-savory finish.

Ingredients

Scale
  • 1 lb carrots, peeled and sliced into batons
  • 1 lb parsnips, peeled and sliced into batons
  • 3 tbsp olive oil
  • 3 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400F (200C).
  2. Peel the carrots and parsnips and slice them into uniform pieces about 2 inches long.
  3. In a large mixing bowl, combine the sliced vegetables with olive oil, honey, minced garlic, salt, and pepper.
  4. Toss the mixture thoroughly until all vegetables are evenly coated in the glaze.
  5. Spread the vegetables in a single layer on a large rimmed baking sheet, ensuring they are not crowded.
  6. Scatter fresh thyme sprigs over the top of the vegetables.
  7. Roast for 30 minutes, tossing the vegetables halfway through to ensure even browning.
  8. Remove from the oven when the edges are caramelized and the centers are tender.
  9. Garnish with fresh parsley and serve immediately.
